LA FRONTERA!  (PAIRS WELL WITH THAI BASIL CHICKEN)

The signature cocktail: “If we put everything on the menu that’s available here, it would be as thick as a Bible,” quips longtime Thaikyo bartender Gloria St. John. And you won’t find the Tequila Frontera ($12) on the menu – or at any other bar, for that matter. The Thaikyo team recently invented this highly sippable cocktail and sought their regulars’ approval. The Frontera’s pretty red shade comes courtesy of red bell pepper, muddled with slices of lime and sprigs of mint. Garnished with all of the above, it’s one of those photogenic drinks that’ll inspire envy among your Instagram followers.

Tequila Frontera

1/4 red bell pepper, plus pepper ring to float

8 sprigs of mint, divided

1/2 lime, plus lime wheel for garnish

2 ounces white tequila

1 ounce simple syrup

Splash of sour mix

Muddle about one-quarter of the bell pepper with six sprigs of mint and about half of the lime. Add tequila, simple syrup and sour mix. Shake with ice and strain into chilled glass. Garnish with a pepper ring, a couple of sprigs of mint and a lime wheel.
